The argument for filling an interior wall tile is about what happens to the surface afterwards rather than what it looks like on delivery. A filled, sealed face is a stable substrate: it takes paint, it takes joint compound, and it does not move as the stone breathes in and out with the humidity of a bathroom.
The unfilled alternative is genuinely worse in a wet room. The pores drink moisture, the tile stays cold and damp behind the face, and a painted surface over it will blister eventually. That is not a quality problem with unfilled stone — it is the correct behaviour of an open-vein material in a wet room, which is why filling is offered here.
