A bar top is the cut-to-size form where the stone has to do less and the steel has to do more. The projecting end of a bar is a cantilever, and stone is very poor at cantilevering — it works in tension by having a great deal of weight in the unsupported part, and the moment that weight is supported by a frame instead, the material has nothing left.
So the rule is simple and it is not negotiable: steel under the projection. At 30 mm the overhang can be around 300 mm before the deflection is visible. Beyond that, go to 40 mm, and beyond 400 mm of projection, use a steel frame that carries the load and treat the stone as a cladding on it.
