How this one behaves on site

The vertical half of a stair, and the piece that gets matched to the tread. The riser is vertical, so it sees neither footfall nor weather in the way the tread does.

The riser is the easier half of a stair and that is why it goes wrong quietly: it is ordered separately, matched from a different lot, and nobody notices until the stair is half-built and the tread and riser no longer agree in tone.

Order them together. That is the whole instruction. A tread and riser from one lot read as a set; from two lots they read as two products on a staircase, and no amount of careful installation hides it at close range.

Structurally the riser wants mechanical fixing to the stringer rather than adhesive on the back face. Stone is heavy, the riser spans a height, and a bed of adhesive on a vertical stone-on-steel joint is a joint that works until it does not.

Indoors, unfilled is fine on a riser because the riser neither takes footfall nor takes rain. Outdoors, fill it: a vertical unfilled stone face outdoors wicks from both ends, and the bottom edge is where it will start to break down.

Matte on an interior is the safer specification where the stair is a main circulation route; honed is acceptable in a low-traffic private stair and looks better in photographs.
